Last Sunday's Guinness Culinary Competition was part of the city's annual Celtic Calling, and the annual Celtic Calling will grow in size and effect.

This year's culinary activities have attracted three delicious creations, all of which are blended with the famous Irish black beer (and other Celtic "spirits").

Last year's runner-up, Katherine Schipke, ordered a vegetarian mushroom Guinness Bisque filled with wonderful earthy flavors (potatoes, onions, onions, garlic, celery, thyme, sherry, soy sauce, yo!).

JoEllen Zacks made a decadent Guinness espresso cake with Bailey's Irish cream cheese icing. The cake was covered with delightful Moist Chocolate cake, covered with rich icing and embellished with Bailey's trademark kick.

Becky Charles Suthers submitted a Guinness Gingerbread cake with Irish butter caramel sauce, a perfect balance of sweetness and spices, brown sugar and syrup, and cinnamon, nutmeg, cloves, nutmeg and ginger.

These three dishes are all award-winning. I really want to announce that they are all award-winning. But because it was a beer-themed competition, I chose the most beer-inspired recipe.

I could taste all the subtleties of Becky Gingerbread Cake and Caramel Sauce Guinness Black Beer - a dessert that fully embodies one of my favorite beers.

When Corrine O'Shea opened Salud! In September 2013, she was a pioneer of the vegetarian and raw food movement in central Oregon.

She is not the first. Sarah's Raw & vegetarian Cafe has been closed and is available on a daily basis to supplement its richer "Super Food Ice Sand" menu. "But I wish you health! There are more: tortillas, kale rolls, salads, small plates, even breakfast.

Although the location of the cafe is not impressive, it is located on Franklin Avenue, near the Re/Max real estate office in central Bend. It paved the way for several other local vegetarian restaurants.

"A lot of work has been done," O'Shea said. "But we have the support of some amazing regulars who have come here four times a week for five years."

The space is narrow, disorderly and colourful. Eight small tables, each with a bunch of flowers, can sit 16 guests. When winter snow melts, there are extra outdoor seats. Diners order at the counter from O'Shea or colleagues, and they smile and deliver food and drinks directly to the table.

Raw food enthusiasts do not heat any ingredients to more than 118 degrees. They claim that any higher level kills enzymes, vitamins and minerals. When O'Shea provides a bowl of hot soup every day to withstand outdoor temperatures, she winters.

I'm glad to feel warm during a recent snowy visit. A delicious cup of sweet potato and spinach soup ($4 for a cup and $7 for a bowl) is very healthy for me. The flavors of turmeric, ginger, black pepper and garlic give it a rich flavor.

But O'Shea did not compromise on her promises. She promised that all organic foods would not only contain meat, but also gluten, soybeans, corn, eggs, dairy products or peanuts.

Good health! Breakfast, labeled "On the Moon", shows how using food dehydrators and blenders can turn nutmeat, for example, into very different things that they look like. Scrambled eggs and sausages? Eggs are cashews with turmeric. Walnut kernels, star anise seeds, fresh sage and maple syrup are added to the meat pie.

Under a slightly hot, egg-free Dutch pepper sauce, this combination is complementary - better than a separate one. Tomatoes, avocados, sesame and green leafy vegetables are the last dish of the dish ($14.50 for a plate and $9.5 for a half plate), accompanied by fresh fruit (blueberries and pineapple dices were eaten when I went).
